Chocolate Cranberry Protein Treats

Holiday baking is a great way to sneak a little extra protein into your diet. These Protein Treats are light and chocolatey!

Chocolate Cranberry Protein Treats

Preparation Time: 10 minutes. Cool time: 1 hour. Makes 12 small treats.

Ingredients:

  • 1/4 c coconut oil
  • 3/4 c natural peanut butter
  • 1/2 c honey
  • 2 tsp vanilla
  • 1 scoop Eidopro Protein Powder
  • 1/2 c dried cranberries
  • 1/2 c shredded coconut, unsweetened
  • 3 c puffed brown rice cereal (not rice krispies - the only ingredient should be brown rice)

Method:

Heat oil in sauce pan over low heat. When melted, add in peanut butter, honey and vanilla, stirring constantly until smooth. Remove from heat and continue stirring while adding in cocoa and Eidopro Protein Powder. Add in cranberries, coconut and puffed rice until rice is completely coated in chocolate mixture. Transfer to 9 inch square dish and press in gently with back of spoon. Refrigerate for 1 hour, slice and serve. Store in refrigerator or freezer.
