Flourless Cranberry Pistachio Protein Cookies
Preparation Time: 5 minutes. Bake time: 8-10 minutes. Makes 24 cookies.
Ingredients:
- 1 c cashew butter
- 1/4 c maple syrup
- 2 eggs, lightly beaten
- 1 tsp vanilla
- 1 scoop Eidopro Protein Powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 c raw, unsalted pistachios, shells removed
- 1/2 c naturally sweetened dried cranberries
- 1/2 c greek yogurt (or white chocolate) baking chips
Method:
Preheat oven to 350 degrees. Combine all ingredients in one bowl and mix thoroughly with wooden spoon or electric mixer. Drop batter onto parchment paper lined baking sheet and bake for 8-10 minutes, until firm and golden brown. Best served fresh out of the oven!
