Serve these hearty, festive protein pancakes with butter and syrup, or fresh fruit and greek yogurt for some extra protein!
Autumn Harvest Protein Pancakes
Preparation Time: 10 minutes. Makes 10 pancakes.
Ingredients:
- 3/4 c quick oats (not instant)
- 1 c buttermilk
- 1/4 c gluten-free baking mix (or whole wheat flour)
- 1 scoop Eidopro Protein Powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 c cocoa powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 egg
- 1 c canned pumpkin
- 1 tsp vanilla
- 1 apple, peeled and shredded
Method:
In small bowl combine oats and buttermilk, let oats soak while preparing other ingredients. Whisk together baking mix, Eidopro Protein Powder, baking powder, baking soda and spices in large bowl. In medium bowl mix together egg, pumpkin, vanilla, and shredded apple until combined. Add oat mixture to wet ingredients. Fold wet ingredients into dry and stir until just combined, do not over mix. Scoop batter (it will be quite thick) onto hot griddle or frying pan and cook until both sides are golden brown.
